Crispy Smoked Chickpeas

 

Crispy baked chickpeas with smoked paprika

Chickpeas are a fantastic source of fibre and protein, as well as being budget friendly. Crispy oven baked chickpeas make the perfect savoury snack. The key to crispy chickpeas is leaving them in the oven after cooking to really dry them out. Experiment with your favourite herbs and spices to suit your tastes but remember to be generous with your seasoning!

  • 2 cups Dried and soaked chickpeas* (*soak in water for 6-8hrs)
  • 2-3 tbsp Extra Virgin Olive Oil
  • 2 tbsp Smoked paprika
  • 1 tsp Cumin (ground)
  • 1 tsp Coriander (ground)
  • 2 tsp Sea Salt (ground)
  • 1 tsp Pepper (ground)
  1. Rinse and drain pre-soaked chickpeas. Pour onto lined tray.

  2. Drizzle the olive oil over the chickpeas and add spices to the pan. Toss to combine.

  3. Bake in oven for 20 minutes. Toss the chickpeas every 5 minutes until golden. Once cooked leave chickpeas in the oven to dry out for half an hour.

  4. Once cooled add to airtight container and portion out when ready to snack or top a dish.
