Snack pizzas

If you are looking for a healthy snack but sick of vegetable sticks and cheese and crackers then these mini pizzas are for you. An easy way to get vegetables, protein and high fibre whole grains in your diet. Like all pizzas these get better the next day and are perfect hot or cold. The bases themselves come in packs of 12 making the perfect opportunity to prepare in advance for a weeks worth of delicious snacking. The toppings are all based on taste, mix and match to suit your preferences.

  1. 6 Wholemeal mini pizzas
  2. 1 Tbsp tomato paste
  3. 1 Tbsp pesto
  4. 2 tomatoes, sliced
  5. 1/2 red capsicum, diced
  6. 1 cup spinach
  7. 1/2 brown onion, thinly sliced
  8. 6 black olives, sliced
  9. 2 Tbsp sun dried tomato strips
  10. 1/3 cup low fat tasty cheese, shredded
  11. 2 tsp dried oregano
  1. Preheat oven to 180C and line oven tray with baking paper.
  2. Top mini pizza bases with paste and pesto. Top with spinach first and then other ingredients.
  3. Season the pizzas with dried oregano, basil or mixed Italian herbs or even chilli flakes.
  4. Bake in the oven for 10-15 minutes until bases are crispy and cheese is melted.
  1. You can eat these bases hot or cold.
  2. Try reduced salt BBQ sauce instead of pesto if looking for a lower calorie alternative
