Mixed greens and vibrant roasted vegetables
Christmas lunch ideas are overwhelming at this time of year, and on a day where you want to maximise time with family and friends the dressings for your lunch should be quick and simple. These share plates are also high in nutrients and anti-inflammatories to try and balance out the delicious goodies copious amounts of alcohol that creeps into your diet during the silly season. Try piling up your plate with bright vegetables, they'll be the new star of your Christmas lunch.

  1. Mixed greens;
  2. 250g snow peas, trimmed
  3. 250g green beans, trimmed
  4. 2 bunches of broccolini, halved
  5. 1 bunch of Chinese broccoli, halved
  6. 1 bunch of asparagus, trimmed
  7. 2 tbsp extra virgin olive oil
  8. 4 garlic cloves crushed
  9. the juice of one lemon
  10. Roasted vegetables;
  11. 5 large beetroots, quartered
  12. 1kg pumpkin, chunked
  13. 2 large sweet potatoes, chunked
  14. 1 head of cauliflower, cut into large florets
  15. 1 large red capsicum, sliced
  16. 300g turnips, trimmed
  17. 2 large brown onions, cut into wedges
  18. 2 garlic bulbs, halved
  19. 2 tbsp olive oil
  20. 2 tbsp turmeric
  21. 1 tbsp cinnamon
  22. salt and pepper to season
  1. Heat oven to 180C. Combine roasted vegetables in two large silver trays, dress with olive oil and spices. Use hands to toss and season well. Place in oven and bake for 30 minutes.
  2. Blanch asparagus with boiling water, leave for 3 minutes, drain away hot water and refresh with cold water. Place on the bottom of a large serving plate.
  3. Place the snow peas, beans and broccolini in a microwave safe bowl with 2 tbsp of water, cover and cook in microwave for 5-7 minutes until greens slightly softened but still vibrant. Place on top of the asparagus and cover with foil.
  4. Meanwhile, heat oil in fry pan and quickly sauté the garlic for one minute, add Chinese broccoli and fry on heat for 1 minute, remove from heat and toss in oil for further minute. Pour broccoli on top of other greens and add some extra olive oil, lemon juice and season well.Toss until all greens are glossy.
